Tomato Egg Quinoa

This recipe is a perfect vegetarian way to meet your protein needs! Unlike many plant sources of protein, quinoa is a complete protein meaning that it provides all of your essential amino acids in one place. Egg is also a complete protein, so you can get all of the essentials in one go with this meal. The acidity of the tomatoes pairs perfectly with the mild flavour of the egg, and the fluffy quinoa is too good to pass up! Not to mention it’s quick and easy, taking only 15 minutes to make and using staples you may already have sitting in your pantry.

Ingredients

  • 2 cups sliced tomato
  • 1 egg
  • ½ tsp cooking oil
  • ½ tbsp Maggi seasoning
  • 1/4 cup dry quinoa
  • ½ cup water

Instructions

  1. Place quinoa in a small pot and add ½ cups water. Place on the stove, cover and allow water to come to a boil. Cook for 10-15 minutes or until water is completely absorbed. Turn off the heat and let sit covered for another 5 minutes. Fluff with a fork.
  2. While quinoa is cooking, add cooking oil with tomatoes into a pan and cook for 2-3 minutes. 
  3. Add in the egg and stir fry with the tomato until egg is cooked through. Add Maggi seasoning and cook for another minute.
  4. Place egg tomato stir fry over quinoa and serve.
  5. Enjoy!
