Olive Lemon Chicken

This exceptionally easy and comforting meal can be easily customized and incorporates incredible flavours. The chicken can be seasoned how you desire and even stuffed with the prepared toppings. Tomatoes, onions, and olives add both colour and vitamins to the dish, and roasted potatoes would also make a great side to round out the meal. Any chosen vegetables, such as carrots or sauteed spinach, can be added alongside the other toppings to add flavour and nutrition. Lemon slices add incredible colour and acidity to this dish and can be easily spiced to pack a powerful, flavourful punch. Lastly, this meal requires hardly any preparation or labour, making it a perfect go-to weekday meal, even for those with busy schedules.

Ingredients

  • 2 boneless chicken breasts
  • ½ cup green or kalamata pitted olives
  • 45 garlic cloves
  • ½ cup cherry tomatoes, sliced
  • ¼ red onion, sliced
  • ¼ cup olive oil
  • ½ lemon, sliced
  • Rosemary
  • Chives
  • Italian seasoning
  • Red pepper flakes
  • Salt & pepper

Instructions

  1. Preheat oven to 375℉.
  2. On a lined sheet pan, place chicken breasts side-by-side, drizzle with olive oil, and season as desired.
  3. Place olives, garlic cloves, tomatoes, and red onion slices on, around, and between the chicken breasts. Drizzle with olive oil.
  4. Disperse rosemary and chives throughout the chicken and toppings, and season with italian seasoning and red pepper flakes.
  5. Bake for 35-40 minutes, and enjoy.
