Coconut Granola Bars

These coconut granola bars are complex in flavour and texture, and are packed with nutrients.  They are both crunchy and chewy, and the chocolate and dried cranberries create a subtle sweet and tart flavour in every bite! Both pumpkin seeds and coconut contain healthy fats that may contribute to heart health.  Pumpkin seeds are also a great source of antioxidants and protein. This recipe is super easy to make and great for a quick breakfast or snack on-the-go!

Ingredients

  • 3 cups rolled oats
  • 1 cup shredded unsweetened coconut
  • 3 tbsp coconut flour
  • 7.5 oz (2 cups) pumpkin seeds (or any seeds)
  • 1 cup dried cranberries (or any dried fruit)
  • ¾ cup honey
  • ½ tsp salt
  • 6 tbsp coconut oil (melted)
  • 12 tbsp brown sugar
  • 1 tsp cinnamon
  • ½ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F, and line a medium sized rimmed baking sheet (18 inch x13 inch) with parchment paper.
  2. Mix all ingredients together in a large bowl.
  3. Press mixture into prepared baking sheet.  Flatten granola mixture and pack tightly into the pan using a spatula. Then bake for 20-25 minutes.
  4. Let cool for 15 minutes (to allow the bars to harden) before cutting into 32 bars.
