Cauliflower Rice

Cauliflower is such a versatile vegetable, but my personal favorite way to eat it is in rice form. It might sound weird at first, but give this simple recipe a try and I promise that you won’t regret it. Not only is cauliflower rice delicious, but it’s filled with antioxidants that help reduce anti-inflammatory damage within the body. It is also low in calories, high in protein, and rich in micronutrients such as vitamin C, vitamin K, and potassium. Top it with a stew, curry, stir fry – your taste buds can thank me later.

Ingredients

  • 1 medium head of cauliflower
  • Spices of your choice

Instructions

  1. Wash cauliflower thoroughly
  2. Using a grater, grate the cauliflower including the stem
  3. Using a dishtowel, press the cauliflower until most of the moisture is out
  4. Using a nonstick pan, pan fry the cauliflower until desired crispiness and softness is achieved
