Vegan Scallion Mashed Potatoes

We all love a good mashed potato recipe. This one spices it up with some scallions AND it’s vegan! No cream, less butter, and it sure was delicious. I personally love having potatoes as the carbohydrate portion of my meals since it’s so versatile and gives me the energy to push through long work days or workouts. Whether it’s air fried, baked, boiled, or mashed, a good recipe, like this one, won’t disappoint. Try it out and let me know what you think!

Ingredients

Scale
  • 6 cups diced potatoes
  • 1/2 cups vegan butter 
  • 1 cup plant milk
  • 1 loose cup of scallions
  • 1 tbsp salt
  • 1 tsp onion powder
  • 1 tsp minced garlic

Instructions

  1. Pour water into a large pot and bring to a boil
  2. Boil potatoes until soft enough to slide a fork through it
  3. Drain potatoes but keep in the same pot
  4. In the same hot pot, add plant milk, scallions, salt, onion powder, and garlic
  5. Mash with a potato masher or fork until smooth or desired texture
  6. Serve with gravy or eat it how it is!
