Tortilla Pizza
Pizza is one of the most delicious and comforting foods out there, but making pizza dough can be a hassle, and not everyone has premade pizza dough lying around in the fridge! Try out this recipe for a super quick pizza as a snack (or meal if paired with more food)! This is a super versatile recipe and can use essentially any ingredient as long as you have the three main ingredients: tortillas, tomato sauce, and cheese. This is one of my go-to recipes when I’m running short on time or need to get rid of old veggies in the fridge.

Ingredients

- 1 tortilla
- ¼ cup tomato sauce
- ½ cup shredded mozzarella
- Thinly sliced veggies of choice (spinach, zucchini, mushrooms, peppers, etc)
- Thinly sliced pepperoni (or veggie alternative)
Instructions
- Preheat oven to 400˚F
- Place the tortilla on a baking sheet covered with parchment paper
- Spread a layer of the tomato sauce, leaving a few millimeters on the edges of the tortilla
- Sprinkle ¼ cup of cheese
- Add however many or little toppings as you like
- Sprinkle the remaining ¼ cup of cheese over top
- Bake at 400˚F for 15 minutes or until golden brown
- Enjoy!
