Papaya Boats

This delicious and refreshing breakfast makes me feel like I’m waking up on the beach in a warm, tropical place. Not Raincouver. Papayas are loaded with vitamin C and vitamin A, which can aid in eye health! Plain greek yogurt is high in protein, low in sugar, and adds a delicious creaminess to this snack. If you’re looking for more texture, toppings such as granola or chia seeds can be great for a bit of crunch too!

  • Yield: 2 Papaya boats 1x

  • 1 papaya
  • ½ cup plain greek yogurt
  • ¼ cup granola
  • 1 tsp honey or maple syrup

  1. Cut the papaya in half lengthwise and scoop out the seeds
  2. Fill the inside of the papaya with the greek yogurt
  3. Top with other fruits such as raspberries or blackberries
  4. Sprinkle the granola and drizzle the honey over top
  5. Enjoy!
