Papaya Boats
This delicious and refreshing breakfast makes me feel like I’m waking up on the beach in a warm, tropical place. Not Raincouver. Papayas are loaded with vitamin C and vitamin A, which can aid in eye health! Plain greek yogurt is high in protein, low in sugar, and adds a delicious creaminess to this snack. If you’re looking for more texture, toppings such as granola or chia seeds can be great for a bit of crunch too!
- Yield: 2 Papaya boats 1x
Ingredients

- 1 papaya
- ½ cup plain greek yogurt
- ¼ cup granola
- 1 tsp honey or maple syrup
Instructions
- Cut the papaya in half lengthwise and scoop out the seeds
- Fill the inside of the papaya with the greek yogurt
- Top with other fruits such as raspberries or blackberries
- Sprinkle the granola and drizzle the honey over top
- Enjoy!
