Miso Roasted Eggplant

 Eggplants are a great source of antioxidants and high in fibre; coupled with miso, which is high in vitamins and probiotics, this recipe is perfect as a side dish! Easy and simple, this miso-glazed eggplant only takes a few minutes to make but is so satisfying and delicious! Pair with a protein of your choice and some rice for quick lunch or dinner!

Ingredients

  • 1 eggplant 
  • 1 tsp sesame oil 
  • 1 tsp sugar 
  • 1 tsp mirin 
  • 1 tsp water
  • 1 tbsp miso 

Instructions

  1. Preheat the oven to 425 F 
  2. Cut the eggplant in half and soak it in water for 10 minutes. 
  3. In a bowl, combine the sugar, mirin, water and miso together 
  4. Pat the eggplant dry with a paper towel and score the eggplant in a criss-cross directions
  5. Place the eggplant on a baking tray and drizzle on sesame oil, and place the flat side down
  6. Bake the eggplant for 15 minutes or until tender 
  7. Spread on the miso glaze and bake again for 3 minutes 
  8. Garnish with sesame seeds and green onion, and enjoy!
