Greek Salad

This colourful salad is a staple of the Mediterranean diet, with cucumbers, tomatoes, olives and onions, this salad provides a wide variety of vitamins and antioxidants while being tasty. The feta adds more protein and flavour to this delicious salad. Slightly tangy and refreshing, this salad is easy to make and great to add to lunches and dinners. Feel free to adjust the vegetables to your liking, or even add some green peppers and mint for more variety!

Ingredients

Scale
  • 1 cucumber, chopped 
  • 2 cups cherry tomatoes, halved 
  • ½ red onion, thinly sliced
  • ¼ tsp dijon mustard 
  • ⅓ cup pitted kalamata olives 
  • ¾ cups feta cheese, cubed
  • ¼ tsp dijon mustard
  • ¼ cup extra-virgin olive oil 
  • 3 tbsp red wine vinegar 
  • Black pepper 
  • Salt 

Instructions

  1. In a bowl combine your dijon mustard, extra-virgin olive oil red wine vinegar, and salt and pepper. 
  2. Put all your vegetables in a large bowl, drizzle the dressing on top and toss, add more salt and pepper or herbs to taste and serve.
