Asian Cucumber Salad

As the weather begins to warm up, cool off with this refreshing cucumber salad! This salad is super easy and quick to whip up, making it a great appetizer for dinner or as a snack! Believe it or not, cucumbers are made up of 95% water so they can help keep you hydrated and refreshed. They also contain vitamin K and antioxidants that help fight against free radicals!

  • Yield: 1 serving 1x

Ingredients

Scale
  • 2 mini cucumbers 
  • 3 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp soy sauce 
  • 1 tsp sesame seeds 
  • 1 tsp red pepper flakes 
  • ¼ tsp salt

Instructions

  1. Thinly slice the cucumbers and place in a bowl 
  2. Add salt and toss the cucumbers and let it sit for 5 mins (to release water)
  3. Strain the water released from the cucumbers
  4. Add rice vinegar, soy sauce, sesame oil, pepper flakes and sesame seeds
  5. Mix well and serve
