Asian Cucumber Salad
As the weather begins to warm up, cool off with this refreshing cucumber salad! This salad is super easy and quick to whip up, making it a great appetizer for dinner or as a snack! Believe it or not, cucumbers are made up of 95% water so they can help keep you hydrated and refreshed. They also contain vitamin K and antioxidants that help fight against free radicals!

Ingredients

- 2 mini cucumbers
- 3 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp soy sauce
- 1 tsp sesame seeds
- 1 tsp red pepper flakes
- ¼ tsp salt
Instructions
- Thinly slice the cucumbers and place in a bowl
- Add salt and toss the cucumbers and let it sit for 5 mins (to release water)
- Strain the water released from the cucumbers
- Add rice vinegar, soy sauce, sesame oil, pepper flakes and sesame seeds
- Mix well and serve
