Miso Roasted Eggplant
Eggplants are a great source of antioxidants and high in fibre; coupled with miso, which is high in vitamins and probiotics, this recipe is perfect as a side dish! Easy and simple, this miso-glazed eggplant only takes a few minutes to make but is so satisfying and delicious! Pair with a protein of your choice and some rice for quick lunch or dinner!
Ingredients

- 1 eggplant
- 1 tsp sesame oil
- 1 tsp sugar
- 1 tsp mirin
- 1 tsp water
- 1 tbsp miso
Instructions
- Preheat the oven to 425 F
- Cut the eggplant in half and soak it in water for 10 minutes.
- In a bowl, combine the sugar, mirin, water and miso together
- Pat the eggplant dry with a paper towel and score the eggplant in a criss-cross directions
- Place the eggplant on a baking tray and drizzle on sesame oil, and place the flat side down
- Bake the eggplant for 15 minutes or until tender
- Spread on the miso glaze and bake again for 3 minutes
- Garnish with sesame seeds and green onion, and enjoy!
