Yogurt Loaf with Lemon and Ginger Glaze

Yogurt is such a versatile food for breakfast, as a snack, and for baking! This recipe is a perfect way to use up yogurt that has been sitting in the fridge for a bit too long and is also super quick to make! Any type of plant-based yogurt or dairy yogurt can be used in this recipe. You can elevate this yogurt loaf with an easy lemon ginger glaze or some of your favourite jam.

Yogurt Loaf

  • 2 cups flour
  • 1 cup coconut yogurt (any yogurt will work)
  • ½ cup sugar 
  • ½ cup oil 
  • 2 eggs
  • 2 tsp baking powder
  • Zest of 2 lemons
  • ½ tsp vanilla extract 
  • 1 pinch of salt 

Lemon and Ginger Glaze 

  • ½ cup icing sugar 
  • ¼ tsp ground ginger 
  • 1 lemon (juice and zest)

Instructions

Yogurt Loaf

  1. Preheat the oven to 350F°.
  2. Grease or line a loaf pan.
  3. Combine the eggs and sugar then add oil, vanilla extract, and lemon zest and mix.
  4. Add yogurt and mix until smooth. 
  5. In a separate bowl, whisk together flour, baking powder and salt, then add to the wet batter until combined. 
  6. Pour the batter into the pan and bake for 35-40 minutes. 

Lemon and Ginger Glaze 

  1. In a bowl, add icing sugar, ground ginger, lemon juice and lemon zest and mix until smooth. 
  2. Pour or brush over the loaf and serve!
