Honey Banana Pancakes

These honey banana pancakes are a delicious, sweet breakfast to start your day off on the right foot! Using only one mixing bowl and frying pan, these pancakes are too easy, only take around 15 minutes to make, and pack a surprising amount of protein. To add some more fruit to this yummy breakfast, these pancakes can easily be topped with another chopped, ripe banana, and whatever other berries you desire. A nice drizzle of honey is an amazing way to top it off with some extra sweetness, and can even substitute the maple syrup. Any kind of milk can be used for this recipe, just be sure your batter does not become too thick or too thin or it may cook unevenly! To add some more fibre, add 1/4-1/2 cup of ground-up oats to the batter with a few more tablespoons of milk!

Ingredients

  • 2 mashed ripe bananas
  • 1 cup flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • Pinch of salt
  • ¾ cup milk
  • 1 egg
  • Dash of vanilla
  • 1 tbsp honey

Instructions

  1. In a medium mixing bowl, mash two ripe bananas. Add flour, sugar, baking powder and salt. Mix gently until just combined.
  2. To the same bowl, add milk, egg, vanilla, and honey. Mix gently, but do not overmix batter.
  3. Heat a medium sized frying pan to medium low heat and portion out pancakes 3 inches in diameter. Flip after 4 minutes. Cook the other side for 3-4 minutes.
  4. Plate with maple syrup and optional bananas and berries. Feel free to top with some extra honey!
