Almond Butter Blondies

What even is a blondie? Blondies are similar to brownies but typically not chocolate flavoured and use brown sugar to give them a more caramel taste compared to a chocolate brownie! This recipe swapped a few ingredients for more nutrient-dense alternatives such as white flour for almond flour and tahini or nut butter for butter, all without sacrificing flavour! Almonds are high in fibre, magnesium and vitamin E and have also been shown to reduce blood pressure levels and reduce the ‘lousy’ LDL cholesterol. This recipe was easy to make and follow and is a great option for a sweet snack or dessert! The recipe boasts 6g of protein and healthy fats from the use of almond flour! My biggest tip is to use a very runny nut butter or tahini, a thicker option will not turn out as well, but feel free to add additional mix-ins such as chopped nuts, or even extra chocolate chips! This recipe is also gluten-free and paleo if using dairy-free chocolate chips!

  • 1 ½ cups almond flour
  • ¾ cup coconut sugar
  • 2 teaspoon baking powder
  • 2 eggs
  • ¾ cup tahini or natural almond butter
  • 1 tsp vanilla extract 
  • 2 tbsp chocolate chips
  • ¼ tsp salt

Instructions

 

  1. Preheat oven to 350 degrees F and line an 8×8 baking pan with parchment paper
  2. Mix the almond flour, coconut sugar, baking powder and salt together in a bowl
  3. In a separate bowl mix together the tahini or almond butter, eggs and vanilla
  4. Add the dry ingredients to wet and mix until combined
  5. Transfer to baking pan and sprinkle chocolate chips on top
  6. Bake for 18-22 minutes and let cool completely before cutting
