Oatmeal Raisin Cookies

This is an easy and quick recipe to make when you are wanting something sweet. This recipe has a quick prep time, and the cookies are down in around 10 minutes. It is a great snack to have with you when you want a boost of energy. It is nice, soft and one of my favourite cookies.

  • Yield: 12 cookies 1x

Ingredients

Scale
  • 125 mL whole wheat flour
  • 2 mL baking powder
  • 1 mL baking soda
  • 250 mL oatmeal 
  • 50 mL raisins
  • 50 mL olive oil
  • 50 mL brown sugar
  • 50 mL granulated sugar
  • 1 egg
  • 2 mL vanilla
  • Pinch of salt

Instructions

  1. Preheat the oven to 325F.
  2. Sift flour, baking powder, baking soda, and salt together in a large bowl.
  3. Add oatmeal and raisins into the mix.
  4. In a separate large bowl add oil and then add white and brown sugar gradually for creaming.
  5. Beat the egg and then add vanilla to it.
  6. Add this mixture into the oil and sugar mixture and mix all the ingredients until the consistency is light.
  7. Gradually add the flour mixture to the oil and sugar mixture. Mix the ingredients.
  8. Place on a cookie sheet and bake for 10 minutes until golden brown.
  9. Serve and enjoy!
