Spicy Citrus Shrimp with Mashed Avocado
This easy, fragrant, and bright shrimp preparation is so versatile and packs a flavorful punch. Citrus and spice is such a delicious combination and turns plain shrimp into the star of any side dishes you pair it with. Shrimp is a good source of protein, and avocado is high in essential fatty acids, contributing to satiety. Recommended pairings of kale and mango are high in Calcium, Vitamin C, and Vitamin A. In addition, the preparation time for this dish is only about ten-fifteen minutes.

Ingredients

- 12 peeled, deveined shrimp
- ½ an avocado
- ½ teaspoon turmeric
- ½ teaspoon cumin
- ½ teaspoon curry powder
- Sprinkle of grated ginger
- ¼ teaspoon lemon zest
- Juice of ½ a lemon
- 3 garlic cloves, grated
- 1 garlic clove, chopped
- Red pepper flakes
- Salt, pepper
- Optional: 1 cup kale, 1 mango
Instructions
- Dry all shrimp with a paper towel to ensure the spice mixture sticks to the shrimp.
- In a small bowl, add shrimp, turmeric, cumin, curry powder, grated ginger, grated garlic, lemon zest, ¼ of the lemon juice, salt and pepper. Mix thoroughly until all shrimps are bright orange. Set aside.
- In another small bowl, mash the avocado with a fork. Add the remaining lemon juice, salt, pepper, red pepper flakes, and the chopped garlic. Mix thoroughly until an avocado spread is formed.
- In a medium pan, heat two tablespoons of olive oil over medium heat. Add some garlic and saute until fragrant. Turn the heat down to medium low and add shrimp. Leave the shrimp untouched, letting them cook for 3.5 minutes before flipping. Cook for another 3 minutes.
- Plate shrimp and squeeze some more lemon juice over the shrimp.
- Enjoy by dipping the shrimp into the avocado!
- Pair this dish with kale salad or some grilled mango for additional citrus flavor.
