Energy Balls

This quick and easy recipe is perfect for when you’re feeling low energy and need a quick boost before a workout or just to start your day. Not to mention they are so versatile- you can make them any flavour you’d like- and are absolutely delicious. Dates and oats are the main ingredients; Dates are filled with nutrients such as: potassium, copper, manganese, vitamin B, and more, as well as lots of fibre and antioxidants. Similarly, oats also have health benefits, some of which include it’s high antioxidant, fibre, and nutrient content (e.g. manganese, phosphorus, copper, iron, magnesium, vitamin B, etc), as well as its ability to lower cholesterol level and aid in controlling blood glucose levels.

Ingredients

Base

  • 1.5 cup rolled oats
  • 10 medjool dates
  • ½  tsp vanilla extract

Pumpkin energy balls

  • ¼ cup pumpkin purée
  • ½ tsp black strap molasses
  • ¼ cup pumpkin seeds
  • 1 tsp cinnamon powder

Earthy coconut energy balls

  • ½ cup coconut shreds
  • 2 tsp matcha powder

Chocolate peanut butter energy balls

  • ¼ cup natural peanut butter
  • ½ cup chocolate chips (or cacao nibs for a less sweet option)

Instructions

  1. In a blender or food processor, blend the “base” ingredients
  2. For the pumpkin energy balls, also blend in the pumpkin purée, black strap molasses, and cinnamon powder
  3. For the earthy coconut energy balls, blend in the matcha powder and ¼ cup of coconut shreds
  4. For the chocolate peanut butter energy balls, blend in the peanut butter 
  5. After blended, roll in to 2 tbsp balls and use the leftover ingredients as toppings
  6. For the pumpkin energy balls, the pumpkin seeds are used as the topping, for the earthy coconut energy balls, the leftover ¼ cup of coconut shreds are used as the topping, and for the chocolate peanut butter balls, the chocolate chips (or cacao nibs) are used as the topping.
