Matcha Turtle Bread

These delightful little turtles are sweet in more ways than one! The slight bitterness of the matcha pairs wonderfully with the mellow chocolate shell, making this the perfect treat that will bring a smile to your face. Matcha is known to be high in antioxidants which reduces oxidative stress on your cells. Antioxidants  may help decrease the risk of cardiovascular disease and type 2 diabetes. Matcha is also high in caffeine – if you’re getting tired of coffee every morning, try a cup of matcha to switch things up! Baking these turtles is a lengthy process, but it’s an easy and approachable recipe. If you have kids or other baking partners-in-crime, you’ll be sure to have lots of fun bringing these creatures to life!

For the matcha bread:

  • 1/3 cup warm milk
  • 1 tsp dry active yeast
  • 2 ½ tbsp granulated sugar + ½ tsp extra
  • 1 ½ cups all-purpose flour
  • 1 tbsp milk powder
  • 1 tbsp matcha powder
  • ½ tsp salt
  • 1 egg
  • 2 tbsp softened butter
  • Sesame seeds (optional)

 

For the chocolate shell:

  • 3 tbsp softened butter
  • 2 ½ tbsp powdered sugar
  • 1 tsp cocoa powder
  • ½ egg white
  • ¼ tsp vanilla extract

Instructions

  1. Combine yeast with warm milk and ½ tsp sugar, let rest for 5 minutes.
  2. Combine the matcha bread dry ingredients together in a large bowl. Add yeast mixture and the egg and combine until a sticky dough forms. Add butter and continue to knead until butter is incorporated.
  3. Cover the dough and let rest for 1 – 1 ½ hours.
  4. Preheat the oven to 340 F.
  5. Add all the chocolate shell ingredients into a separate bowl and mix until a smooth dough forms.
  6. Once the matcha dough has rested, split into 4 equal portions. Shape three portions into round shapes, then split the last portion in half. Split one half into three balls (to form the heads), and split the other half into smaller balls (to form the limbs). Assemble into turtle shapes.
  7. Split chocolate dough into 3 equal portions and shape each into flat circles. Place on top of the turtle shapes to make the shells. Score the shells with a knife in a diamond pattern.
  8. Optional: place 2 sesame seeds on the heads to make the eyes.
  9. Bake turtles in the oven for 17-20 minutes.
