Easy Zaru Soba

Zaru soba is a Japanese cold noodle dish that is refreshing and easy to prepare. Soba noodles are made from buckwheat, which is a whole grain that has been shown to benefit those with high blood sugar and help with heart health and inflammation. Soba noodles are also gluten-free*, making them a perfect noodle alternative for those who have sensitivities or allergies. This recipe is perfect for days when you don’t know what to make but want something quick. Add your protein of choice and vegetables for a more filling meal. You can also make the dipping sauce in advance and store it in the fridge! Enjoy! 

*Some soba noodles may contain gluten. Be sure to check the label!

Ingredients

  • Four bunches of soba noodles 
  • ¼ cup mirin 
  • ¼ cup soy sauce 
  • 1/2 tsp dashi powder
  • 1 cup water 
  • 1 tbsp sugar to taste

Instructions

  1. Boil a pot of water and cook the soba noodle
  2. Once cooked, drain and rinse with cold water, set aside 
  3. In a bowl, prepare the dashi stock with the dashi powder and water 
  4. Add in the soy sauce, sugar and mirin 
  5. Serve in a separate bowl from the noodles, and enjoy!
