Zha Jiang Mien translates roughly to “fried sauce noodles” and is a classic dish in Chinese cuisine. As the name suggests, Zha Jiang is often eaten over noodles but you will find that this recipe is incredibly versatile! It can be eaten over rice, by itself, or even folded into dumplings if you chop the ingredients fine enough. This dish is chock-full of great nutrients like vitamins A and K from the peas and carrots, not to mention loads of protein. It also keeps in the fridge for up to five days, making it the perfect meal prep for busy schedules. The last time I made Zha Jiang was to celebrate a friend’s birthday in which we eat long noodles to represent a long, healthy life.
