Did you know that bibimbap originated in Korea? It roughly translates to “mixed rice” — once you’ve assembled your ingredients (and taken your picture for the gram!), you mix everything together and chow down! We like using brown rice to cut down on the glycemic load. You can add any vegetables you’d like, but for this recipe we stuck with the classics like carrot, zucchini and spinach. For an added protein boost, you can add any lean cooked meat such as beef, chicken, pork, or lamb. What makes this dish so special is that it seems to have everything our bodies need; vegetables, whole grains, complete proteins, probiotics (from the kimchi!) and healthy fats. You can add more or less gochujang if you like your dish spicier or milder. We recommend serving the dish warm with a glass of hot green tea.
